Philippe Da Silva, a passionate and generous chef, has made the Hostellerie Les Gorges de Pennafort one of the most sought-after restaurants in the Var. With a love for fine ingredients, he serves up sophisticated neo-classical cuisine that is always a pleasure to enjoy. His culinary works of art include foie gras and Parmesan ravioli, lobster salad with sun-dried tomatoes and pan-fried Dublin bay prawns with Chanterelle mushrooms and cream of arugula…

Terrace

On the terrace

When the weather is fine, you can enjoy the restaurant's terrace. It is covered by a stunning "bioclimatic" pergola, which adapts perfectly to outdoor conditions, offering a unique and pleasant experience.

The terrace is open from mid-May to the end of September.

Bar and caviar cellar

Bar

Treat yourself to an exceptional moment in the bar at the Hostellerie Les Gorges de Pennafort. In a cosy atmosphere, we serve guests a rich menu of drinks, spirits, wines and champagnes. You can also give in to the temptation of one of the bar's "signature cocktails". This year, grapefruit liqueur and champagne have provided a delicious source of inspiration for our head barman, who delights guests with his many creations.

The bar also has a caviar cellar. Guests can enjoy these fine black pearls with bite-sized snacks, such as blinis, beef tartar and oysters, and smoked salmon, to accompany a glass of champagne or chilled vodka.

Snacks can also be purchased and enjoyed in your room.

An exceptional wine cellar

Wines

In keeping with the excellence of the Hostellerie Les Gorges de Pennafort, the wine menu, which includes 600 bottles, gracefully accompanies the dishes prepared by the Chef. It sparkles with champagne and is naturally rich in regional wines.

 

Among these, we recommend our "house favourites" produced by Madame Geneviève Garrassin at the Château Saint-Julien, a family-run operation located in La Celle. Guests can also discover the Protected Designation of Origin "Coteaux Varois en Provence".

The restaurant of the Hostellerie Les Gorges de Pennafort offers guests various set menus: 

  • Prices as of 17 March 2017
  • Prestige Alexandra Menu: €390 for two people (including water and coffee) and a bottle of Laurent-Perrier Alexandra Rosé champagne or Bollinger Grande Année, white 2004 or other depending on stocks.
  • Tasting Menu at €160 (served for the whole table)
  • Gourmet Menu at €95
  • Discovery Menu at €85
  • Market Menu at €59: lunchtime from Tuesday to Friday
  • Children's menu at €20
  • The establishment is closed from the 24th of December 2016 to the 2nd of January 2017 and from the 20th of January to the 17th of March 2017

Philippe Da Silva – the spirit of an innkeeper

The Chef

Described as the most discrete of the Provence-Alpes-Côte d'Azur region's top chefs, Philippe Da Silva, who is originally from the town of Cogolin, did not take long before finding his path. An apprentice at the age of 14, he cut his teeth with stints at a number of top establishments.

He has a deep-seated love for Provence and its produce and in 1995 he left the Chiberta in Paris, where he was awarded two Michelin® stars, to move to Callas, a small village in the countryside of the Var and take the reins of the Hostellerie Les Gorges de Pennafort alongside his wife, Martine. He loves working with fine ingredients above all and, the following year, he won a Michelin Guide® star for his "simple, contemporary cuisine," which he has kept ever since.

It's all about being an innkeeper and giving guests a warm welcome. Cuisine and hospitality go hand in hand. If you show people love, they return it.

The Chef's wife receives guests in the dining room. The restaurant's main room boasts an enchanting interior with sumptuous bouquets of flowers carefully arranged here and there indoors and on the terrace beneath the shade of the lime trees.
